Love to grill? Want a barbecued dish that both omnivores and vegetarians will love? Look no further than chard. This is a delicious and quick-to-prepare chard and cheese dish. You will need a grilling tray so you can easily prepare and transport this chard to the barbeque grill.
You need large chard leaves, the cheese of your choice, and olive oil. I used some shredded 6-cheese Italian mix and some fat-free feta cheese.
Begin by brushing (or spraying) three large leaves with oil on one side.
Place the three leaves on the grill tray, oil side down.
Sprinkle these leaves with the first layer of cheese.
Cover the first layer of cheese with two or three more chard leaves (no need to oil these) and top with the next layer of cheese. I used fat-free feta for the second layer.
Top with two or three more chard leaves and brush the tops of them with olive oil.
Place the grill rack on the barbeque grill and cover. Cook for about 5 minutes.
Flip the stack over. At this point the cheese will be melted and the chard will be wilted so it should all turn as one piece. Cover again and cook for about 5 more minutes.
Some suggested toppings: fresh tomato salsa or sour cream is a good compliment for this dish.
Serve with other grilled (summer squash, here) or steamed veggies.
