Here’s another reason to plant herbs: they are perfect for creating quick and elegant centerpieces. Here are some ideas for creating a lovely table using herbs:

  • Pick several small sprigs of herbs and tie them into bundles with a thin piece of raffia or ribbon. Place one on every napkin at the table.
  • Use sage and thyme along with the flowers of your choice in a small vase or jar on the center of the table. Since sage is very cold-tolerant even those in northern climates can often harvest good looking sprigs during the holidays.
  • Buy several small, 4″ pots of fresh herbs and place them in decorative pot covers on the table. Give these to your guests to take home to remember a special evening.
  • Place three candles on a long, narrow tray and surround them with sprigs of herbs from the garden.

Candles that are shaped like pears or pinecones are especially appropriate for the winter holidays. Don't use scented candles, however...let the fresh herbs provide the fragrance.
